If you feel bloated, foggy, and wiped out after eating and you cannot figure out why, you are not imagining it. Gluten is one of the first things worth looking at, and not because it is trendy. For a ton of people it is quietly one of the biggest things filling their bucket.
Gluten is a protein in wheat, barley, and rye, so it is in bread, pasta, cereal, and most baked goods. But it also hides in places you would never think to look. Soy sauce, salad dressings, marinades, seasoning blends, gravies, anything with the word malt in it, even some supplements. That is why a lot of people try to cut it out, still feel bad, and decide it did not work. They never fully cut it out, because they did not know where it was hiding.
When gluten is a problem for you, it does not always look like a stomachache. It shows up as bloating, fatigue, brain fog, joint aches, headaches, or that heavy, sick feeling after eating you cannot quite explain. And it is not always consistent, which is the part that makes you feel like you are losing your mind.
You go to the doctor, explain all of it, and the standard tests come back normal. Standard bloodwork is looking for celiac disease, which is a specific autoimmune condition. If you do not have celiac, those tests can come back clean and you can still react to gluten. There is a whole category called non-celiac gluten sensitivity that standard labs are not built to catch. I lived that for years. My labs kept coming back fine while I felt anything but.
One important thing before you change anything. If you think you might have celiac, get tested before you cut gluten out, because the tests only work if gluten is still in your system. Past that, the only way to really know if gluten is your problem is to pay attention and write it down. What you ate, and how you felt after. When you track it, the pattern shows itself, and you walk into your next appointment with your own evidence instead of a shrug.
